For 45 Candies:
- 6oz Chocolate Chips
- 3oz Heavy Cream
- 1tsp Flavoring*
- 8oz Chocolate Candy Melts
Ganache
- Nuke in microwave 45 seconds set power to 5. You might need an additional 15 seconds set power to 4.
- Stir and set aside to cool
Shells
- Nuke for 1 minute on power level 5. Keep nuking until runny. Do not overheat.
- Pour a small portion of candy coating in each mold. Paint up the sides with a brush. Allow 5 – 10 minutes to set.*

This recipe covers 45 Candies (or three molds of 15 candies each).
I use the cheap silicone molds.
* Melting chocolate – Yeah, I have the Wilton Chocolate Melting pot thingie, I call it the Chocolate Cauldron. I love the Chocolate Cauldron and think it’s well worth 20 – 25, but you’ll see it for 30 – 40, avoid that.
*Flavorings I like – Amaretto, Frangelico, Orange Extract (for your Mormon / Calvinist friends), don’t dismiss plain old Vanilla Extract either.
If you’re here because you’re trying to figure out how to do this – I use the Mercken’s dark chocolate melting wafers, a Wilton Chocolate melting pot thingie, and use a food grade brush for the shells. I hate the fill, set and dump method as I always make a complete mess of it. The brush method feels very Anal Retentive Chef but it doesn’t take that long and is much much neater.
